Tucked away behind velvet drapes and warm lighting, Roma Norte is a 2,000-square-foot cocktail lounge that comes alive after sundown. Inspired by Mexico City’s famed neighbourhood, its dark brown marble bar — sleek and sculptural — anchors the space, flanked by rich velvet seating, antique mirrors, and bronze detailing that evoke the grandeur of Mexico City’s architecture with an effortlessly modern San Diego edge.

The cocktail menu reads like a global itinerary, boasting nearly 70 creations split between Technique Driven and House selections, alongside four mocktails. Highlights include a crystal-clear rum and Coke clarified through milk washing, and the Nitro Punch, where hoja santa and mango meet via nitro muddling. Even a Banana Daiquiri gets spun through a centrifuge.

Complementing the drinks is chef Erik Aronow’s sharp, flavour-forward menu of small plates designed with cocktails in mind. Think: prime hanger steak, carne crudo laced with birria-spiced aioli, or an elevated take on Flamin’ Hot Corn Nuts. Popular with locals, Roma Norte is where you should head, especially if you are a cocktail lover.

Mothership

Speakeasy fans would love stepping through a cave-like entrance and finding themselves in an immersive sci-fi wonderland. Mothership is designed as a crashed spaceship’s command centre where the interior pulses with colour-changing lights, faux stalagmites, flickering stars, and a custom eight-hour sci-fi soundtrack! 

At the heart of this cosmic escape is a cocktail programme that fuses tiki tradition with unapologetic experimentation. Beverage director David Kinsey and bar manager Juan Castañeda have crafted 17 original drinks that push boundaries. Three house-made orgeats and grenadines anchor a vegan menu referred to as “Earth food,” in keeping with the venue’s interplanetary narrative.

Signature sips include the Mindkiller, a Dune-inspired concoction of overproof rum, amaro, coconut, pineapple, tangerine, and a Tang cordial that evokes retro futurism in a glass. The Heliotropic reinvents the mai tai with kumquat, mole, lime, and curry, while the Dive Simulation uses cultured cashew gardenia for a lush, frothy finish.

The food menu is just as inventive — think Korean-style potato latkes and sweet potato donuts with rosemary glaze. While having a good time, don’t get carried away as they enforce a strict 90-minute limit per reservation.

Hidden behind an unmarked door inside Common Theory Public House in San Diego’s Convoy District lies Realm of the 52 Remedies — an unusual speakeasy. Guests move through a white doorway, past a hidden herbal apothecary, and into a richly imagined 1920s Shanghai salon, where carved bronze clouds swirl across the ceiling and lotus-shaped booths beckon. 

At the centre of this curiously named bar is cocktail alchemy with a nod to ancient Chinese herbal traditions. Cocktail Maestro Chris Lee crafts drinks that draw on centuries-old remedies, spun with contemporary flair and layered technique.

But it’s the food and cocktail omakase that makes the place unforgettable. Executive Chef Jonathan Bautista offers a seasonal tasting experience that compliments the cocktails — melding Chinese, Korean, and Thai inflections with a San Diego twist. Each cocktail comes with thoughtfully paired small plates that enhance the herbal and exotic flavours in the drinks. They have a two-hour reservation limit.
