Garlic soup, or Castilian soup, is a classic among our comforting recipes. It smells and tastes like home, evoking memories of those days when Grandma or Mom is in the kitchen preparing a comforting, flavourful dish, especially welcome on cold days. It's also a great way to use up leftovers, very economical, and a real crowd-pleaser.

This dish is a fine example of humble, traditional cooking, but also a good reminder that simplicity, when executed with care, can be extraordinary and even sophisticated. Just ask the fancy restaurants that have it on their menus and serve it with a flourish. In any case, if you want to make it successfully at home and impress everyone, here's everything you need to know.

Ingredients

  • Fresh parsley
  • Pepper
  • Salt
  • garlic cloves
  • 4  slices of day-old bread
  • 1 L chicken or vegetable broth
  • 4eggs
  • 1teaspoon of sweet paprika
  • 4tablespoons of extra virgin olive oil

Preparation

Step 1

Peel and slice the garlic cloves.

Step 2

Cut the day-old bread into thin slices.

Step 3

In a saucepan, heat the olive oil over medium heat. Add the sliced ​​garlic and sauté until golden brown, but don't overcook it so it doesn't burn and become bitter. 

Step 4

Add the bread and sauté for a few minutes until lightly toasted.

Step 5

Remove the saucepan from the heat and immediately stir in the paprika, stirring quickly to prevent it from burning.

Step 6

Add the broth over the bread and garlic.

Step 7

Season with salt and pepper to taste.

Step 8

Bring to a boil, then reduce heat. Let the soup simmer for 10-15 minutes to allow the flavors to meld.

Step 9

Add the eggs, letting them poach directly in the hot stock. Cook for about 3-4 minutes until the whites are set, but the yolks are still slightly runny.

Step 10

Serve hot and -optionally- garnished with a little chopped fresh parsley.

Trick: To give this soup a very special touch, add a splash of white wine to the sautéed garlic and bread just before adding the paprika, and let the alcohol evaporate.
