One of the best things about summer is, without a doubt, its pantry: seasonal fruits and vegetables, as well as fresh, light foods that nourish and feel good for everyone. Fruit ceases to become a healthy snack and becomes part of every meal, not only as a dessert, but also as the main ingredient of the main course. This is the case of our recipe book with watermelon, different versions of gazpacho, and salad with fruit, or even a simple (but exquisite) pairing of cheese and fruit.
Easy; Tasty; Unbeatable.
Therefore, these months are the best months to prepare such light, appetising, and healthy recipes. From the creators of salmorejo with watermelon comes another low-calorie, quick, and infallible recipe, this time with watermelon's first cousin: melon. In this case, we are talking about a refreshing salad with melon. The secret? Cook it on the grill to enhance its sweetness.

Ingredients
- Arugula
- Canons
- Spinach
- Cured ham
- Fresh goat cheese or feta cheese (or both)
- Pine nuts
- Extra virgin olive oil
Preparation
Step 1
To prepare it in the pan, cut the melon into slices, remove the peel, and spread the portions lightly with a little oil or butter.
Step 2
Cook them on a hot griddle, over medium heat, until golden brown.
Step 3
The heat will cause the fruit's natural sugars to concentrate and caramelise, intensifying the flavour.
Step 4
In a deep bowl, start by placing your chosen green base.
Step 5
Add the grilled caramelised melon, the cheese (feta or goat cheese), and the pine nuts.
Step 6
You can level it up and make the salad even more gourmet by adding a crunchy touch to the ham: place two to six slices of ham (or its equivalent in cubes) without overlapping in a microwave-safe dish covered with kitchen paper.
Step 7
Take it to the microwave and cook at medium-high power for one and a half minutes.
Step 8
To heat it in an air fryer, cook for 4-5 minutes at 180°C.
Step 9
Remove the ham from the heat and let it cool down on absorbent paper to remove excess fat.
Step 10
When it cools, it will become crispier.
Step 11
Add the ham to the salad and season with EVOO.
